A home cooked meal is the best, but it is even better when it is quick and affordable. Today we are making Enchiladas, and they are quick, affordable, and GOOD!
1 can black beans, drained and rinsed
1 can chopped green chiles
1 can cream of mushroom soup
1 pound of veggie crumbles (or hamburger)
1 package taco seasoning mix
10 ounces red enchilada sauce
10 flour tortillas
cheddar cheese, shredded
Preheat oven to 350 degrees. Heat veggie crumbles in frying pan, or fry hamburger. Add taco seasoning. In separate bowl, combine black beans, chilies, and soup. Add crumbles/beef. Spoon bean and meat mixture into tortilla and roll tortilla closed. Place seam-side down in casserole dish. Pour the enchilada sauce over top and sprinkle with cheese. Bake at 350 degrees for 25 minutes.
