Hope you enjoy this super easy recipe that is a great addition to tonight’s dinner!
1 cup rice, uncooked
1/4 cup water
1 onion, chopped
1 small jar pimento, with juice
1 green or red pepper, or BOTH, chopped
1 small jar mushroom pieces, with juice
2 cans of cream of celery soup (I use fat free soup)
Saute onions and peppers. In casserole dish lined with parchment paper, mix all ingredients. Bake, loosely covered, at 350 degrees for 1 hour. Stir every 15-20 minutes.
