Today we are making bacon quiche and a dessert that will make you cry – that’s how good it is. Here are the recipes –
3/4 cup bacon bits
3/4 cup your favorite milk
1 cup your favorite cheese (I use Mexican cheese blend)
1/2 teaspoon salt
Preheat oven to 350 degrees. Cover your pan with parchment paper. In a large bowl, add cracked eggs and milk. Stir together making sure eggs are incorporated well. Add cheese and salt and bacon bits. Stir. Pour into pan and bake for 40 minutes – or until toothpick comes out clean. I made these by pouring into miniature muffin tins. This is good for individuals with dementia. If you use the mini muffin tins, bake the quiche for about 10 minutes.
OATMEAL RAISIN DESSERT
1 1/2 cups of raw oats
1 cup peanut butter
1/2 cup sugar
1/2 cup raisins
Mix together, roll into balls (for your loved one with dementia), or eat straight out of the bowl with a BIG spoon! YUM YUM!
