Today we made Greek Onions, a wonderful side dish for tonight’s supper. I got so excited I forgot to add the apple cider vinegar. Here is the recipe with ALL the ingredients!

GREEK ONIONS

4 large onions
olive oil or olive oil spray
salt
4 ounces feta cheese, mediterranean style
2 tablespoons apple cider vinegar
1/2 cup chopped almonds, toasted

Preheat oven to 400 degrees. Peel and cut the onions horizontally into thick slices, about 1 inch thick. Place on cookie sheet lined with parchment paper. Spray with olive oil spray and sprinkle with salt. Roast onions turning every 15 minutes until soft and brown at the edges. This can take 30-60 minutes depending upon the thickness of your slices. Remove from oven. Top with toasted almonds, feta cheese and sprinkle with vinegar. Cover loosely and put back in oven to allow cheese to heat through. Enjoy!
